I just love chicken salad in the summer. We are always grilling chicken, and I usually grill a few extra to use on my chicken salad. Last week, I whipped up a batch and had the brilliant idea of adding bacon! It was so good, I just had to share my recipe.
I love adding sour cream and mayo to my chicken salad instead of just all mayo. I’ve also done it with plain greek yogurt. Any nuts will do, I’ve done almonds, pecans and even walnuts. Celery and grapes are a must as well as…bacon!
It tastes best with cold grilled chicken, but you can always broil a few chicken breasts just to use for this.
Add a few strips of bacon and you are good to go!
Here’s my full recipe:
Simple Chicken Salad with Bacon
(makes about 3 servings)
2 chicken breasts
3 celery stalks, chopped
1 cup of red grapes, halved
3 strips of bacon, crumbled
1/4 cup almonds, pecans or walnuts, toasted
1/4 cup mayo
1/4 cup sour cream
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp cumin
Chop celery (I like to add some of the celery greens), grapes, chicken and bacon. Toast the nuts in a dry skillet until slightly browned. Add spices, mayo and sour cream. Chill for 30 minutes and enjoy!
It’s so light and yummy! You can make it into a sandwich or just eat it by itself!
