Grilled Veggie Sandwich with Yogurt Dill Sauce


Last week, we made some grilled veggies which are one of my favorite summertime foods.  I commented to my husband that “I could just eat these veggies for an entire meal!”  That got me thinking that a grilled veggie sandwich might be a wonderful meatless meal! I added a yogurt dill sauce and the results were so yummy and healthy!

First, you need to gather up your favorite veggies.  We had zucchini, red onion, bell peppers, mushrooms and grape tomatoes. We also added in some minced garlic.

After chopping up the veggies,  I threw on some seasonings (exact measurements are at the end of this post).  I used italian seasoning, olive oil, salt, pepper and garlic powder.

Toss it together so that it’s evenly coated.  I like to let them sit for 20 minutes or so while the grill is heating up.

While the veggies are grilling (you can put them in foil or a grilling pan), mix up the yogurt sauce.

Mix together greek yogurt, dill, fresh lemon juice and minced garlic and let the sauce sit until you are ready to use.

Grab your favorite bun.  We used whole wheat hamburger buns, but you could do whatever you want. Hot dog buns would also be fun. I would do 100% whole wheat here. You are making a super healthy dinner, don’t ruin it by using white bread! Slather on some real butter and toast them up.

After the veggies are grilled (it really depends on your grill, but ours took about 20 min), layer it all together.  I put on some crunchy lettuce, topped with a heap of grilled veggies and a big dollop of the yogurt dill sauce. SO GOOD!

I also made some parmesean quinoa to go on the side.

Here is the recipe:

GRILLED VEGGIE SANDWICH WITH YOGURT DILL SAUCE

Veggies:
1 zucchini, chopped
1 small red onion, chopped
1 cup chopped mushrooms
1 cup grape tomatoes
1 cup chopped bell pepper
1 Tbs minced garlic (or a few cloves, minced)
3 Tbs olive oil
2 Tbs italian seasoning
2 tsp. garlic powder
salt and pepper to taste
Mix the veggies with the seasonings and grill on medium heat for about 20 minutes or until soft.

Yogurt Sauce (adapted from this recipe):
1 cup plain greek yogurt
Juice of one lemon
3 Tbs chopped fresh dill
1 Tbs minced garlic
salt and pepper to taste
Mix all the ingredients together and let it sit for about 10 minutes or so

Pile the veggies and sauce onto whole wheat buns and enjoy! (makes about 5-6 sandwiches)
