RECIPE: Cinnamon Biscotti

I shared this post over at Sugar Tart Crafts a few weeks ago. If you missed it, here it is.  It’s the perfect afternoon snack to pair with a cup of hot tea for a cold winter day!

Today I’m sharing a delicious treat that will make your house smell absolutely amazing. These cinnamon biscotti make such a lovely gift or just to have on hand to enjoy with a cup of tea or coffee. These little cookies are filled with warm cinnamon and vanilla flavors as well as bits of pecan and white chocolate chips. Delicous!

Cinnamon Biscotti
6 Tbs Butter
3/4 C Sugar
2 Eggs
1 tsp Vanilla
2 C Flour
1 tsp. Baking Powder
1 tsp. Cinnamon
1/2 C White Chocolate Chips
1/2 C Chopped Pecans

Cream the butter and sugar together. Then add the eggs and vanilla and mix.  Add in flour, baking powder and cinnamon until mixed well. Gently mix in the pecans and chocolate chips. Divide the dough in half and form into 2 logs. Bake at 350 for 30 minutes. Let them cool for 15 minutes. Then slice the logs diagonally. Lay the pieces flat and bake for another 20 minutes. Enjoy!

The dough comes together really easily and quickly. You want to form them into flat logs. I like to line my baking sheet with parchment paper.

Arrange them on the baking sheet and bake again for another 20 minutes or so.

These are seriously so yummy. I love that they aren’t overly sweet.
