Lately…


Little Miss Jane is 4 months old! Here she is on my Granny’s vintage Christmas tablecloth. I had to do something a little festive for her December photo! At Jane’s 4 month checkup she was 11 lbs and 24 inches. She’s in the 3rd percentile for weight and 10th for height. We’re glad she’s on the chart! Lula was a little bigger and much longer at 4 months.  Jane is full of smiles and spit up these days. She also has been enjoying lots of harness-free time as she only has to wear it at night now. She even rolled over! I’m sure she would have done it sooner if it wasn’t for that harness. Check out Jane’s 3 month photo here.
I’ve also been doing a little holiday baking. I tried two delicious recipes for a party over the weekend. They were so wonderful, I just had to share!

I had never made peanut butter balls before. They are super easy and so delicious. I did white chocolate as well as semi-sweet.  I thought I’d get fancy and drizzle some over the tops. 
And they are so moist and rich on the inside. 
I also tried out some blondies.  They are only a few ingredients and I had leftover white chocolate chips from the peanut butter balls, so I threw some in. 
They are so buttery and chewy and just wonderful all around. You must make them.
Here are the recipes I used:
Peanut Butter Balls 
(adapted from tasty kitchen)
2 cups peanut butter
1 stick unsalted butter
pinch of salt
1/2 tsp vanilla extract
2 1/4 cups powdered sugar
1 package semi sweet chocolate chips
white chocolate chips (optional)
Place peanut butter, butter and salt in bowl and microwave until soft. Stir in vanilla and sugar until it forms a dough.  Add more sugar if needed. Roll into balls and put on waxed paper lined baking sheet. Stick in the freezer for 20 min or fridge for 1 hour to chill.  Melt chocolate chips.  Dip the balls into the chocolate and let cool on wax paper until chocolate is hardened. Drizzle with white chocolate if desired. 
White Chocolate Chip Blondies
(adapted from smitten kitchen)
8 Tbs butter, melted
1 cup brown sugar
1 egg
1 tsp vanilla extract
pinch of salt
1 cup flour
1/2 cup white chocolate chips
Grease an 8X8 pan. Mix butter and sugar. Beat in egg and vanilla.  Add flour and salt and mix until combined. Add in chocolate chips.  Pour in pan and bake at 350 for 20-25 minutes (mine took about 24 minutes) until golden brown.  Cool before cutting.
