Now that summer is coming to an end and school is starting, quick and healthy breakfast options are a must. Lula is so hungry at the end of the day and I wanted to find some heartier breakfast choices that she would like and would fill her up. I made these mini quiches in a muffin tin and store them in the freezer. Just pop them in the microwave in the morning for a quick breakfast!
I love recipes like this because they are totally customizable. You can pretty much throw in whatever you want. Leftover veggies work great for this!
You could use puff pastry or store bought biscuit dough for the crust, but I used my super quick and easy pie dough recipe. It’s just a few ingredients and no rolling our or kneading is required.
Keep them in a freezer bag and just heat up however many you need. You could also put these in a lunchbox if your kid doesn’t mind eating them cold.
Freezer Friendly Mini Quiche
1 Cup milk
1/2 Cup Half and Half
2 Cups Grated Cheese
1/2 Pound Sausage (or bacon)
1 Cup Chopped Veggies (onion, bell peppers, mushrooms, tomatoes, etc..)
1 Tsp Garlic Powder
Salt and Pepper to taste
1 batch of this easy pie crust
Spray a muffin tin with nonstick spray. Mix up the pie crust dough and press about 1 tablespoon of dough into the bottom and partially up the sides of each cup. Fill the cups with about a tablespoon each of meat, cheese and veggies. Whisk together your eggs, milk, half and half, salt, pepper and garlic powder. Pour the egg mixture over the meat and veggies until each muffin cup is full. Bake at 250 for about 20-25 Minutes. Makes about 18 Quiches.
