I’m always trying to get my girls to eat more veggies. We seem to always offer them at dinner, but lunch and snacks seems to be forgotten in the veggie department. I recently whipped up a chopped salad with one ingredient that got them excited to try it: Goldfish® crackers. This Goldfish crackers chopped salad is just a combination of some crunchy veggies with crispy Goldfish crackers, topped with creamy ranch dressing. I mean, who wouldn’t love that?
I headed to Walmart and grabbed some bulk Goldfish Cheddar Made with Whole Grain crackers, and the Pretzel variety. When in doubt, just get the biggest size! That’s my philosophy anyways. Then, gather the rest of your ingredients.
For this recipe, you will need:
Your favorite veggies (bell peppers, carrots, broccoli, cucumbers, avocado)
Chop your veggies up into bite sized pieces.
Just use any combo of veggies your kids will like. I think not having lettuce makes this easier for little ones to eat.
Drizzle on your favorite ranch dressing.
This chopped salad is so colorful! It will brighten up any plate. To make it super easy, you can have all the veggies chopped up ahead of time and kept in the fridge. Then when it’s lunch or snack time, pour the veggies in a bowl and top with Goldfish crackers and dressing and you have an easy and wholesome option!
