Vegetarian Quinoa Chili


The other night I wanted to make chili but didn’t have any ground beef in the house. I did, however have quinoa and sweet potatoes along with other normal chili ingredients, so I came up with a vegetarian quinoa chili! It turned out super tasty and my little ones that don’t care for meat, loved it! (well, 2 out of 3 of them actually ate some, so in my book that means they loved it).

I roasted the sweet potatoes first to give them some extra flavor.

Then I just dumped all of the other ingredients in the slow cooker and cooked it on high for a few hours. I added the quinoa at the end.

Here’s the recipe:

VEGETARIAN QUINOA CHILI

2 sweet potatoes, diced
1 TBS olive oil
2 cups cooked quinoa
1 can chili beans
1 can black beans
1 8 oz can tomato sauce
1 14 oz can diced tomatoes
2 TBS chili powder
1.5 tsp. cumin
1 tsp garlic powder
Salt and pepper to taste

Toss the diced sweet potatoes in olive oil and a pinch of salt. Roast at 425 for about 15 minutes or until soft and slightly brown. Add the sweet potatoes, beans, tomato sauce, diced tomatoes and seasonings to a slow cooker. Cook on high for about 3-4 hours. Cook 2 cups of quinoa separately and add to the soup before serving.
