Today I’m going to share one of the yummiest meatless meals that I’ve made in a long time. I was wanting a fast and healthy weeknight meal that the kids would love. We always default to tacos and pasta so I decided to change things up and make some mediterranean veggie wraps using California Ripe Olives and tons of other healthy mediterranean ingredients. Honestly, I wasn’t sure if the girls would like these but they loved them! They could build their own wraps and customize it to their tastes. Lula asked for seconds, which is HUGE!
I set out a bunch of different healthy options like brown rice, cucumbers, tomatoes, Californial black ripe olives and a yummy creamy yogurt sauce. Then we built our own wraps for an informal weeknight dinner!
So, here is what you will need:
California Black Ripe Olives – 1 cup chopped
Brown Rice – 1 cup, cooked
Plain Greek Yogurt – 1 cup
Cucumbers – 2-3 baby or 1 large
Red Onion – 1/2 chopped
Lettuce – 1 cup
Cherry Tomatoes – 1 cup chopped
Lemon Juice – 1/2 lemon
Oregeno – 1 tsp
Garlic – 1 clove
Salt and Pepper
Mix the greek yogurt with juice of 1/2 of a lemon, 1/4 cup finely chopped cucumber, salt, pepper, oregeno and garlic and set aside. Prepare the rest of the veggies. Cook brown rice and add salt and a dash of oregeno if desired. Set out all the ingredients and build your wraps!
These would be a fun and different thing to feed a crowd for a party and the ingredients look so colorful and pretty. You could also easily add in some grilled chicken if you didn’t want this to be vegetarian.
A tortilla or pita pocket would also work. Lula actually chose to eat hers as a salad and not have the wrap at all.
