Vanilla Cookies


I recently purchased my first vanilla beans and decided to try my hand at some vanilla cookies. I wanted to use them for Pearl’s birthday cupcakes and I had 2 leftover, so I came up with this super delicious cookie recipe. These guys just melt in your mouth and I love that they aren’t overly sweet.  They are so pretty and would be perfect for a baby or wedding shower…or just to eat on a random evening like I did!

I came across this recipe for vanilla cookies and changed it up a bit to make mine more vanilla-y and added a bit of lemon in there for some bright citrus flavors. So good!

Rolling them in powdered sugar before baking adds just a touch more sweetness and makes them just melt as you bite in them.

Here’s my recipe for these yummy vanilla cookies:

Vanilla Crinkles
1/2 cup butter
1 cup sugar
1/2 vanilla bean (scrape the seeds)
1 egg
1/2 tsp vanilla extract
zest from 1/2 lemon
1/4 tsp salt
1/4 tsp baking powder
1/8 tsp baking soda
1.5 cups all purpose flour
1/2 cup powdered sugar

Directions: Cream the butter and sugar until light and fluffy. Add in the vanilla bean seeds, egg, extract and lemon zest. Beat well.  In a separate bowl mix the dry ingredients. Mix into the wet ingredients until fully incorporated.  For best results chill the dough for at least 30 minutes. Roll the dough into 1 inch balls and then roll in the powdered sugar. Place on parchment paper covered baking sheet and bake for 9-11 minutes at 350.  The cookies will be lightly browned on the bottom but have no color on the tops. Let cool completely and enjoy!
