I love it when I start seeing strawberries at the grocery store, it gives me such joy because that means that summer is just around the corner! I love fresh fruit and veggies when they are in season. This strawberry poppy seed spinach salad is absolutely delicious, creamy and sweet. My girls loved it and asked for seconds!
I threw in the ingredients that I had on hand, but you could easily swap them out for things you have or add in feta cheese, dried cranberries, or even more fruits.
First, whip up your dressing. Here’s how I made mine:
Poppy seed Dressing (adapted from Taste of Home)
1/8 cup Mayo
1 Tbs Sugar
1/2 Tbs Sour Cream
1/2 Tbs milk
1 1/2 tsp apple cider vinegar
1 tsp poppy seeds
For the salad, this is what I used:
2 – 3 cups mixed greens or baby spinach
1 cup sliced strawberries
2 green onions, sliced
1/4 cup toasted sliced almonds
Toss with the salad dressing until coated.
