As promised, I’m back with a parmesan quinoa recipe that you can serve alongside your grilled veggie sandwiches with yogurt dill sauce. This is so easy, I just grabbed some ingredients I already had on hand and mixed them together.
You will need 2 cups cooked quinoa (cook according to package directions), lemon juice, green onions, parmesan cheese and some salt and pepper to taste.
Mix the ingredients together with hot quinoa and serve! It’s also
really yummy cold the next day. I mixed in some leftover grilled veggies
and had a quinoa “salad”. Yum!
Here’s the recipe:
PARMESAN QUINOA RECIPE
2 cups cooked quinoa
2 green onions, chopped
juice of one lemon
1/4 cup grated parmesan cheese
salt and pepper to taste.
Mix everything together and enjoy!
