As I promised in my menu plan, I am going to share my whole wheat cottage cheese pancake recipe. I have mentioned this recipe before, but I tried it out with whole wheat to follow our real food rules and they turned out wonderful!
I never would have thought to use whole wheat flour prior to this challenge, and I’m so glad I made them this way. I’ll never go back!

Whole Wheat Cottage Cheese Pancakes
I know this concept sounds disgusting, but these are the best pancakes! I prefer them over regular pancakes. They are a family tradition on my husband’s side and we make them all the time. I love that I can boost the nutrition by adding the whole wheat flour. If you use real maple syrup, you can have a super healthy and protein packed breakfast with just a touch of natural sweetener! (And they are super yummy with powdered sugar as pictured, but we refrained this time around since that’s technically refined sugar!)
