I never would have thought to use whole wheat flour prior to this challenge, and I'm so glad I made them this way. I'll never go back!
Here is the recipe
Whole Wheat Cottage Cheese Pancakes
3 eggs, beaten
1 cup cottage cheese
1/4 tsp salt
1/4 cup whole wheat flour
2 Tbs melted butter
1 tsp lemon juice (optional)
Beat eggs and mix everything in with the eggs. Oil a skillet and pour batter by the 1/8 cup. Once they are slightly browned on both sides, serve with maple syrup and/or lemon juice
I know this concept sounds disgusting, but these are the best pancakes! I prefer them over regular pancakes. They are a family tradition on my husband's side and we make them all the time. I love that I can boost the nutrition by adding the whole wheat flour. If you use real maple syrup, you can have a super healthy and protein packed breakfast with just a touch of natural sweetener! (And they are super yummy with powdered sugar as pictured, but we refrained this time around since that's technically refined sugar!)

ReplyDeleteJust a little note about whole wheat... While the vitamins and lower glycemic index make it a better choice, it's always better to get it organic. Whole grains by nature use the whole part of the grain as opposed to the inner portion for refined wheat. Therefore the risk of intaking pesticides is almost sure... unless of course they are grown without pesticides (or natural versions of them).
