Real Food Day 13: Peanut Butter Chocolate Oatmeal Bars



I came up with a delicious dessert by accident! How often does that happen? I was attempting to make homemade granola bars (yes, I know I'm getting all my recipes from heavenly  homemakers...it's such a good source for real food!) and they just weren't turning out quite right.  However, it gave me the idea to make a dessert similar to those yummy peanut butter chocolate rice crispy treats.  Do you know what I'm talking about? There is a layer of thick chocolate on top and they are so yummy.  I decided to try a healthier, real food version. (notice I said healthier...not neccessarily a healthy thing to eat all the time, but much better than the other version!)





Here is the yummy recipe!

Peanut Butter Chocolate Oatmeal Bars


1/2 cup natural peanut butter
1/3 cup honey
1/4 cup oil
2 1/4 cups old fashioned oats


1/2 cup cocoa powder
1/2 cup sucanat (or sugar would work)
1 cup oil
1 T. vanilla





Melt peanut butter, honey and oil in a saucepan over medium heat.  Add the oats.  Press oat mixture into a buttered 8X8 pan.  Next, melt the cocoa powder, sucanat, oil and vanilla in a saucepan until sugar is mostly dissolved.  Pour the chocolate mixture over the oat mixture until the oats are covered (there may be chocolate leftover that you can save for another time) and stick it in the freezer until the chocolate is hardened.  


I keep my bars in the fridge or freezer because the chocolate melts rather quickly!
