I'm know I'm late in posting this week's menu! Mondays are super crazy days for me and I wasn't organized enough to post this yesterday. We didn't get around to eating all of the planned meals from last week, so I'm carrying them over to this week. We must have had more leftovers than I had thought. I did come up with an amazing brownie using whole wheat flour and sucanat instead of sugar. I'll post the recipe at the end!
Menu Plan for the week of 12/12
Monday:
Breakfast:oatmeal & fruit
Lunch: (work day sack lunch) kale salad, cheese
Dinner: Leftovers
Tuesday
Breakfast: omlettes
Lunch: (play date @ our house!) whole wheat mac & cheese, fruit, no bake chocolate peanut butter bars (recipe coming!)
Dinner: sloppy joes w/homemade buns, sweet potato fries
Wednesday:
Breakfast: homemade poptarts
Lunch: hummus & veggies on homemade pita, fruit
Dinner: chicken enchiladas with homemade tortillas
Thursday:
Breakfast: whole wheat cinnamon bread
Lunch: whole wheat toast pizzas & fruit
Dinner: chicken fried rice & veggies, whole wheat brownies & chocolate frosting
Friday:
Breakfast: oatmeal & fruit
Lunch: pb&j on whole wheat bread, cheese & fruit
Dinner: date night!
Breakfast: french toast
Lunch: hummus & veggie pitas & fruit
Dinner: (cousin girl night @ our house)- diy mini pizzas on whole wheat crust, raw veggies &ranch dip, christmas cookies (not sure what I'll do for the cookies!)
And now for the brownie recipe. I really was very skeptical that I could make a decent tasting brownies with no refined sugar or flour. I love brownies and I usually can tell if something isn't the "real thing". But these are actually very good! I'm not going to say that they are as good as regular white flour, white sugar brownies... but they are pretty darn close. Close enough to make it this way from now on. I'm also not claiming that they are good for you and you are allowed to eat 20 of them because of the whole grains and unrefined sugar...but maybe you can eat 2 instead of 1 and not feel guilty!
Whole Wheat Brownies:
(adapted from this recipe)
Mix butter, sugar, eggs and vanilla. Add in cocoa, flour, salt, flour and baking powder and mix until combined. Pour into an 8X8 greased pan and bake for 25 minutes at 350. Enjoy!



















Do you use white whole wheat flour or regular red whole wheat flour? I find that makes a huge difference in the finished product, especially cookies, brownies, muffins etc.
