Recipe: Goat Cheese Pesto Pizza

Kansas City just got 2 Trader Joes.  It's been hyped up big time.  I went to one of the Trader Joes shortly after it opened and didn't get what all the hoopla was about.  We gave it an other shot and went to the other Trader Joes location over the weekend.  This store is much bigger and set up better.  We ended up getting quite a few groceries there as I was very impressed with their prices.  Many of the things we got were comparable to Aldi prices...shocking!  I don't know if I will buy all my groceries there on a regular basis as some of their things still are pricey.  But, we did get some fun stuff to make a yummy pizza!


Reid and I decided to cook a fun dinner after the girls went to bed, so we came up with an idea for a gourmet homemade pizza.  We got all of our ingredients from Trader Joes:

(not pictured: bacon  Also, we didn't end up adding the spinach, so disregard that!)

I was excited about the pizza dough we found at TJ.  It was only a few bucks and looks very "homemade"


Definitely worth it if you don't have time to make your own, but still want that homemade taste.  It was yummy!


Here's what we came up with:

Pesto Goat Cheese Pizza

Pizza Crust
Pesto
Goat Cheese Chunks
3-4 cloves of Garlic
1 Onion
Bacon (4-5 slices)



First, we carmelized the onions with the garlic. Next, we fried up the bacon and cut it into small chunks. Don't fully cook the bacon because it will cook more in the oven.  Then, we spread the store bought pesto onto the pizza crust




Sprinkle on your toppings...




And bake at 350 for about 20 minutes. 


Let me tell you, it was soooooo good!!! And so easy because the dough and pesto were store bought, so not much work was involved. 



This would be great for a dinner party or you could cut the pizza up into small squares and serve it as an appetizer.
